Ingredients
- 1 granny smith apple, peeled
- 1 cup (250 ml) all-purpose baking mix
- 1/2 tsp (2 ml) ground cinnamon
- 1/2 cup (125 ml) milk
- 1 egg
- 1 tbsp (15 ml) vegetable oil
- warm maple syrup, butter, powdered sugar or toasted pecans (optional)
Directions
- Remove core from apple; slice apple into 1/4-in. (6-mm) slices and set aside. Combine baking mix, cinnamon, milk, egg and oil in bowl; stir just until dry ingredients are moistened (batter will be slightly lumpy).
- Lightly spray Double Burner Griddle with vegetable oil using Kitchen Spritzer; heat over medium heat 1-3 minutes or until shimmering.
- Arrange eight apple rings on griddle. Starting in center of each apple ring, slowly pour scant 1/4 cup (50 mL) batter over apple ring (use just enough batter to cover each ring).
- Cook 1-2 minutes or until pancake is light golden brown. If desired, serve with warm maple syrup, butter, powdered sugar or toasted pecans.
