This quick and easy chopped salad is inspired by the flavors of the Mediterranean, including chickpeas, cucumber and feta. A garlicky oil and vinegar dressing brings everything together.

Ingredients
- 2 tablespoons extra-virgin olive oil
- 2 tablespoons red-wine vinegar
- ¼ teaspoon garlic powder
- ¼ teaspoon salt
- ¼ teaspoon ground pepper
- 1 (15 ounce) can no-salt-added chickpeas, rinsed
- 1 cup diced cucumber
- 1 cup quartered cherry tomatoes
- ⅓ cup chopped parsley
- ¼ cup finely chopped red onion
- ¼ cup halved kalamata olives
- ¼ cup crumbled feta
Directions
- Whisk 2 tablespoons oil, 2 tablespoons vinegar, ¼ teaspoon garlic powder, ¼ teaspoon salt and ¼ teaspoon pepper in a large bowl. Add 15 ounces chickpeas, 1 cup cucumber, 1 cup tomatoes, ⅓ cup parsley, ¼ cup onion, ¼ cup olives and ¼ cup feta; toss to coat.
