Makeover Fruit Pizza

A healthier version of the classic fruit pizza using lighter ingredients like reduced-fat cream cheese and whole grain crust, without losing flavor or fun.

Ingredients

  • 1 cup all-purpose flour
  • 1/4 cup confectioners' sugar
  • 1/2 cup cold butter
  • 1 (8 ounce) package reduced fat
  • cream cheese
  • 1/3 cup sugar
  • 1 teaspoon vanilla extract
  • 2 cups halved fresh strawberries
  • 1 (11 ounce) can mandarin
  • oranges in light syrup, drained
  • 1 cup fresh blueberries
  • 5 teaspoons cornstarch
  • 1 1/4 cups unsweetened
  • pineapple juice
  • 1 teaspoon lemon juice

Directions

  1. In a large bowl, combine flour and confectioners' sugar. Cut in
  2. butter until crumbly. Press onto an ungreased 12-in. pizza pan.
  3. Bake at 350 degrees F for 10-12 minutes or until very lightly
  4. browned. Cool on a wire rack.
  5. In a small mixing bowl, beat cream cheese, sugar and vanilla until
  6. smooth. Spread over crust. Arrange the strawberries, oranges and
  7. blueberries on top.
  8. For glaze, in a small saucepan, combine the cornstarch, pineapple
  9. juice and lemon juice until smooth. Bring to a boil; cook and stir for
  10. 2 minutes or until thickened. Cool slightly. Drizzle over fruit.
  11. Refrigerate until chilled.
