Pepperoni Pizza Salad

A low-carb twist on classic pizza—mixed greens topped with pepperoni, cheese, veggies, and a zesty Italian dressing.

Ingredients

  • 10 plum tomatoes, chopped
  • 3 medium green peppers, cut into
  • 1-inch pieces
  • 2 cups shredded mozzarella
  • cheese
  • 1 (3.25 ounce) package sliced
  • pepperoni
  • 1 (2.25 ounce) can sliced ripe
  • olives, drained
  • 1/4 cup chopped onion
  • 1/3 cup tomato juice
  • 1/4 cup red wine vinegar or cider
  • vinegar
  • 1/4 cup olive or vegetable oil
  • 1 garlic clove, minced
  • 1/2 teaspoon dried basil
  • 1/4 teaspoon pepper
  • 3/4 cup seasoned salad croutons

Directions

  1. In a large bowl, combine the tomatoes, green peppers, cheese,
  2. pepperoni, olives and onion. In a small bowl, combine the tomato
  3. juice, vinegar, oil, garlic, basil and pepper; mix well. Pour over
  4. tomato mixture and toss to coat. Cover and refrigerate for several
  5. hours. Just before serving, sprinkle with croutons.
