Rice with Almonds and Raisins
A gently spiced rice side dish with golden raisins and slivered almonds—perfect alongside curries, Middle Eastern, or North African meals.

Ingredients
- 1 tablespoon butter
- 1/3 cup finely chopped onion
- 1 cup uncooked white rice
- 2 tablespoons raisins
- 1 1/2 cups chicken broth salt and pepper to taste 1/4 cup sliced almonds
Directions
- Melt butter in a medium saucepan over medium heat. Saute onion, stirring, until tender. Stir in the rice, raisins, broth, salt and pepper. Bring to a boil.
- Reduce heat to low, cover and simmer 15 to 20 minutes, or until rice is cooked and liquid is absorbed. Stir in almonds before serving.
