Ingredients
- 9 to 10 pounds fully cooked bone-in ham
- 3 cups unsweetened pineapple juice
- 1-1/2 cups packed brown sugar
- 1/2 cup unsweetened pineapple juice
- 2 tablespoons unsalted butter
- 1 tablespoon honey mustard
- 1-1/2 teaspoons cayenne pepper
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
Directions
- Soak hickory chips or pellets; add to smoker according to manufacturer's directions. Preheat smoker to 250°.
- Using a sharp knife, score surface of ham with 1/4-in.-deep cuts in a diamond pattern.
- Place ham in smoker, cut side down. Smoke, basting with pineapple juice every 30 minutes, until ham reaches 130°, 2 to 2-1/2 hours.
- Meanwhile, in a small saucepan, combine glaze ingredients. Bring to a boil over medium heat. Reduce heat; simmer, uncovered, until slightly thickened, 4-6 minutes, stirring constantly. Reserve 3/4 cup glaze for serving.
- Baste ham with glaze. Cook until ham reaches 140°, 8-10 minutes, basting with glaze occasionally. Serve with reserved glaze.
