Strawberry Caprese Salad

This strawberry caprese salad is a fruity twist on the classic Italian dish, with juicy, ripe strawberries standing in for tomatoes. The sweet-tart flavor of strawberries goes beautifully with fresh mozzarella, basil and a drizzle of balsamic vinegar. This colorful salad is perfect as an appetizer, side dish or light lunch. To make it a main dish, top it with roasted chicken or add white beans.

Ingredients

  • 2 tablespoons extra-virgin olive oil
  • 1 tablespoon balsamic vinegar
  • ¼ teaspoon salt
  • ⅛ teaspoon ground pepper
  • 2 cups strawberries, hulled and quartered
  • ⅔ cup fresh small mozzarella cheese pearls
  • ¼ cup loosely packed basil leaves

Directions

  1. Whisk 2 tablespoons oil, 1 tablespoon vinegar, ¼ teaspoon salt and ⅛ teaspoon pepper together in a small bowl until fully combined.
  2. Arrange 2 cups quartered strawberries and ⅔ cup mozzarella pearls on a large platter; top with ¼ cup basil. Drizzle evenly with the oil mixture and serve immediately.
