Toast Skagen is a classic Swedish dish that is typically served on a slice of toasted bread, often rye bread.

Ingredients
- 225g/8oz shrimp, peeled, cooked and chopped
- 115g/4oz mayonnaise
- 125g/4½oz soured cream
- 2 tbsp chopped fresh dill, plus sprigs to garnish (optional)
- 2 tbsp finely chopped red onion
- 1 tbsp freshly squeezed lemon juice
- 4 slices rye bread
- 1 tbsp unsalted butter
- salt and freshly ground black pepper
Directions
- Mix the shrimp, mayonnaise, soured cream, dill, onion and lemon juice together in a bowl and season with salt and pepper.
- Toast the rye bread slices until crispy. Spread a layer of butter on each slice of rye bread.
- Spoon a generous amount of the shrimp mixture onto each slice of bread. Garnish each serving with a dill sprig, if desired. Serve immediately.
