Veggie Sandwich with Garlic Herb Cheese

The creamy spreadable cheese in this veggie sandwich adds flavor while holding everything in place. This colorful, well-balanced sandwich is crispy from the cucumber and peppers, sweet from the tomatoes and beets, and tangy from the banana peppers.

Ingredients

  • ½ cup garlic-and-herb spreadable cheese
  • 4 slices whole-wheat bread
  • 1 cup thinly sliced peeled cucumber
  • 1 medium yellow bell pepper, thinly sliced
  • 1 medium beefsteak tomato, sliced ¼-inch thick
  • ½ cup sliced cooked beets
  • 2 tablespoons mild banana pepper rings
  • 8 leaves butter lettuce

Directions

  1. Spread 2 tablespoons cheese on each bread slice. Divide 1 cup sliced cucumber, the sliced bell pepper and sliced tomato, ½ cup sliced beets and 2 tablespoons banana peppers between 2 of the bread slices; top each with 4 lettuce leaves. Top with the remaining 2 bread slices, cheese-side down. Slice the sandwiches in half diagonally, if desired.
